How to Cup Coffee

This guide will walk you through the process of cupping coffee, which is a technique used to evaluate the flavour and aroma of coffee beans and ground coffee. Cupping is an important skill for coffee professionals and fans who want to grow their coffee knowledge and appreciation of this beloved beverage.

To cup coffee, you will need the following materials: 

  1. a cupping bowl
  2. cupping spoons
  3. coffee grinder
  4. hot water
  5. coffee beans
  6. timer

It is also helpful to have a spittoon to spit the coffee after tasting to avoid consuming excess caffeine.

This process begins by grinding the coffee beans to a medium-coarse consistency. The ground coffee is then placed in the cupping bowl.

Next, hot water is poured over the grounds, allowing them to steep for a few minutes. The coffee crust that forms on the surface should then be broken by gently pushing down with a spoon, releasing the aromas of the coffee.

Now it’s time to taste the coffee.

Using the cupping spoon, sip the coffee from the bowl, slurping it to aerate the liquid and spread it across your palate.

Note the flavours present – whether it is nutty, fruity, floral, or earthy. The quality of the coffee can be determined by its acidity, body, and aftertaste.

Repeat the process with different coffee beans or brewing methods to compare and contrast the flavours and aromas. Some professionals even organise coffee cupping sessions to explore the nuances of various coffees together.

Remember that cupping is a subjective experience – what one person tastes may differ from another. It’s important to trust your palate and develop your own preferences with coffee. Once you’ve honed your cupping skills, you’ll be able to appreciate the nuances of different coffees and better understand the craft behind this popular beverage.
